Easy Summer Supper Meals To Try

When it's hot outside, regular food that we enjoy the rest of the year just doesn't taste quite as good and it's time for lighter fare. There are quite a few reasons why we may stick more with quick summer recipes than the rest of the year.

If it does, here are some quick and simple supper ideas for hot nights:

Cool Crisp Salads

Salads make a great dinner if you add just the right stuff. Get out a big dinner plate and put some lettuce on it. Top it with your favorite vegetables including onion, sliced cucumber, garden tomatoes and the likes. Top it off with a source of protein like grilled chicken, sliced sandwich meat like turkey or ham, hard-boiled eggs, tuna, leftover steak etc.

Grab your favorite salad dressing and a chunk of crusty bread (or a bag of croutons) and you're ready for a delicious and healthy summer dinner.

When we grill any type of meat in the summer time, we make a little extra and use it on our supper salad the next night.

Yummy Sandwiches

How about some yummy homemade subs for dinner? These are always a big hit with the kids. My approach to them is similar to the salad ideas I shared above. Grab a sub roll or a french bread add some lettuce, raw veggies and any type of leftover meat, sandwich meats etc. Then pour a bit of your favorite salad dressing over everything and season to taste with salt, pepper and oregano.

You can also make meatball subs. Start with frozen meatballs from the store. Defrost them in the microwave and heat them up in a bit of tomato sauce from a jar. Top your meatballs with some cheese and stick it under the broiler until it melts. Quick tip - make tuna melts and phyli cheese steak subs instead of meatball ones.

Cold Soups To Keep You Cool

Cold soups are another great healthy treat during the hot summer months. You can make all sorts of different cool vegetable soups. Our favorite is the Spanish Gazpacho soup. It’s a cold tomato soup.

Here's how to make this soup. Add a can of diced tomatoes to your blender. Add some peeled cucumber ( I take the seeds out as well), some green bell pepper and a small chunk of onion. Start blending everything together, and pour in a bit of vinegar and a little olive oil while the vegetables are blending together. Season with salt and pepper to taste and top everything off with some garlic croutons.
